A St. Louis favorite since the 1930’s Wiki Article about Gooey Butter Cake
Ingredients:
3 - eggs
1 - stick of margarine
1 - 8 oz Cream Cheese
1 - Yellow cake mix (generic)
1 - 1 lb box of Powdered Sugar
Melt the stick of margarine in a small sauce pan. Mix the yellow cake mix, 1 egg, and the melted margarine in a mixing bowl. It should end up about the consistency of bread dough. Press this mixture in to the bottom of a 9x13 cake pan, making sure you get the thickness fairly consistent.
In a mixing bowl, combine the cream cheese and the other two eggs. When blended fairly well, slowly add the box of powdered sugar. Keep a tablespoon or so of the powered sugar for later. Blend all of this together to a smooth consistency, then pour on top of the mixture in the cake pan. Level it out.
Bake in a 350 deg oven until the center is a nice golden brown. The outer edge will be a medium brown. This is usually about 45 minutes but will vary due to oven differences, and differences in cake pans. After removing it from the oven, sprinkle the remaining powered sugar all over the top. Allow to cool before serving.
Tips: Be sure to melt the margarine as it says above. Using it without melting results in an uneven consistency.
Buy the cheapest generic yellow cake mix you can find. The better mixes actually don’t work well with this recipe.
Add the powdered sugar in slowly to avoid turning your kitchen white.
